Photo: Meatgasm

I did promise pastrami, right? Been doing a lot of barbecuein' the past couple of years on my Weber Smokey Mountain with a major assist from the folks at Virtual Weber Bullet. I'll provide some baby pictures from time to time. The greatest Meatgasm is definitely the spicy, smoked, home-cured pastrami. Last time I did this I covered it in bacon before smoking. Here's some before and after photos. The bacon on top was an unbelievable appetizer and the pastrami was devine.
